3-2-1 Salad Dressing

Although I love a good and creamy homemade dressing like this poppyseed dressing or this favorite cilantro lime dressing, I’m not always in the mood to take the time to make it!

Enter this fantastic 3-2-1 dressing that you can easily remember the ingredients, shake together and be enjoying on your salad in just a couple of minutes!

Jane Birch shared this as a favorite go-to dressing that she has relied on for the past 10 years since she jumped into plant-based eating both feet first. It’s a recipe that comes from Jane Esselstyn, daughter of plant-based pioneer Caldwell Esselstyn.

Ideas for Variations:

This is such a great basic recipe that is easy to tweak to your personal preferences. The vinegar and mustard both have a really strong flavor. If that’s not your thing, you can definitely add some water to temper the flavors, or swap the mustard and maple syrup and use 2 TBSP syrup and 1 TBSP mustard.

Another variation on this recipe I do sometimes is to use coconut aminos in place of the mustard. It has a slightly sweet flavor, so you may be able to reduce or eliminate the maple syrup depending on how sweet you like it!

The best part is that it’s so easy to make that it’s easy to play around with combinations and find the one you love most!
