5 Ingredient Plant-Based Burgers [Gluten-Free, Oil-Free]
When we first started eating plant-based, every holiday, every special occasion, every fun anything presented a dilemma. Did I revert to the old-favorite foods we usually had on these occasions? Or did I try to make something new and hope for the best?
It’s not that I felt like we had to be ultra strict and never eat those foods again. But it seemed like we had a special something at least once a week, and then we usually ended up with leftovers!
So I started experimenting and over time began to find plant-based foods we really enjoyed on special occasions. And now I don’t have any desire to go back, and except for a few lingering favorites, my husband and kids feel the same way.
Easy, Oil-Free Burgers
One of those foods was veggie burgers. We all actually really enjoyed them, and I could pick them up at Costco and keep it an easy meal.
I experimented with some veggie burger recipes here and there, and found one we really liked, but it was hard to say no to the convenience of prepared burgers.
What I didn’t love about the frozen burgers though was the oil content, along with the fact that by the time we got buns and toppings and most of my family wanted several burgers, it made for a more expensive dinner.
But then I stumbled across this recipe. It was a cinch to try them out for lunch and aside from the mustard, my family loved them! I made a few tweaks and now we’ve been eating them regularly. Not only are they healthier than the store bought burgers, we think they are just as tasty for a fraction of the cost.
So Easy to Make Ahead
It’s been a piece of cake to make a double recipe or more and freeze the extras. They reheated just like store bought burgers and held together beautifully. My problem is that the last time I doubled the batch planning to have the extra in the freezer, they all got eaten in one sitting!
I’ve even been skipping the chill time she recommends in the refrigerator without any apparent downside!
Another thing I’ve loved about these is making them into more of a nugget size. This way we can dip them in barbecue sauce and skip the buns which is a fun option. And I just came up with the BEST 4 ingredient homemade bbq sauce that we all love and is date-sweetened.
Keep Life Simple This Summer
This whole pandemic has left me really enjoying a slower, simpler pace of life. But if one thing hasn’t slowed down, it’s our meals! Having everyone home for all meals has been wonderful but also required a bit more planning.
These black bean burgers are just one of the awesome recipes wrapped up inside the June Meal Plan. I’ve been busy finding the tastiest, easiest and healthiest version of some of our summer favorites including Creamy Pasta Salad, Panda Express Orange “Chicken” Stir Fry, Best Ever Tin-Foil Dinners, Easy Roasted Veggie Bowls and much more.
The best part about the June Meal Plan is that it is PACKED with options to prep-ahead and batch cook. Who doesn’t need a night off from the kitchen in the summer? I find myself wanting to take every night off some weeks, but that never ends well!
We made somewhat of a last-minute decision to take some friends up on their offer to use their cabin this weekend. And all I have to do is plan to make a few of these meals this week, spending a few extra minutes here and there to double the recipes and we will have great meals that come together quickly while we are there.
When we need a little convenience we don’t have to rely on processed foods to do it. A little planning can work miracles!
I hope you love these burgers as much as we do!
