Mega-Fiber Hearty Overnight Oatmeal
Our family has been a fan of overnight oatmeal for years. We rely on steel cut oats in the Instant Pot most days, and these Overnight Oats have been a go-to satisfying breakfast for when we are on the go or just need something ready before an early morning.
The overnight oats never kept us quite as full as our steel cut oats topped with a generous scoop of peanut butter (we go through SO MUCH peanut butter in a week).
So I was fascinated when Ben Tanner shared this recipe using steel cut oats instead of rolled. It had never occured to me to use steel cut oats, but it makes perfect sense as they are more intact than rolled oats and so take longer to digest.
Add to that a massive amount of seeds and you have a breakfast that will keep you full for a Very. Long. Time.
Ben Tanner is an expert on meals like this because he’s also a big proponent of fasting to boost metabolism, reverse diabetes and even reduce autoimmune symptoms.
It’s been fascinating to me how we can add fasting as another layer of support for our body to function better.

The real beauty of this recipe is that it is so customizable. I think my kids favorite is something in between our family go-to recipe and Ben’s, maybe using a combination of rolled and steel cut oats and a higher ratio of oats to seeds.
It’s delicious though and the perfect thing to prep for camping, road trips and all of your summer fun!
