Mexican Lettuce Wraps
Lately lettuce wraps have been my new favorite thing!
Most anytime I go to buy tortillas I’m disappointed. The ingredient list is often long and mysterious, and even the healthier versions are usually more expensive and hardly any better for you.
Not that they aren’t a worthwhile convenience for time to time, but crunchy lettuce has a lot more nutrition bang for your buck and has been a fun change for us lately.
We’ve been loving the artisan lettuce from Costco as well as plain old iceberg lettuce, which may not be at the top of the nutrient density list but is light years ahead of a lot of wrap options!
So you can imagine I was pretty happy to try this Mexican Lettuce Wrap recipe on Healing Strong, which is the non-profit organization Suzy Griswold created to provide resources and support to cancer patients.
It’s so simple, yet unique to anything I had tried and makes the perfect quick and easy meal!
I used our favorite bean and corn salsa for inspiration and combined beans, corn, tomato and avocado in the dressing listed.
The next time I made it, I combined salsa verde with hummus and black beans for a super quick and delicious combo!
The brown rice, avocado and black beans combination make these super satisfying and one of our favorite go-to recipes right now.

- 2 cups brown, black or cauliflower rice cooked
- 1 15 oz can black beans Can leave out if using a bean, avocado and corn salsa
- 1 recipe Black Bean, Avocado and Corn Salsa or salsa of choice
- 1 avocado sliced or guacamole
