Oil-Free Potato Chips

I can’t tell you how often potatoes come up as a favorite food–they really are so satisfying, delicious and easy to prepare.

Often vilified, I would say that potatoes are probably the most loved food among nearly all of my guests.

Not only are they delicious and satisfying, they are gentle on digestion and a great way to fuel an active lifestyle. They are super versatile and don’t actually need to be drenched in butter, sour cream or oil to make an amazing meal.

This tasty oil-free potato chip recipe comes from Shamiz Kachwalla. Shamiz’ Ulcerative Colitis diagnosis left him in a desperate situation in a hospital in Japan.

As all of the traditional medical treatments were rapidly taking his condition downhill, his mom miraculously found this book which pointed them to plant-based eating.

Desperate to turn things around, they began juicing and eating plants instead of hospital food. Within a couple of weeks Shamiz had made dramatic improvements, and instead of the recommended colon surgery, Shamiz was making a rapid recovery and able to leave the hospital.

Shamiz has relied on simple foods like potatoes and fruit in his journey to heal from ulcerative colitis.

The power of plants has been so transformative that Shamiz and his brother Shukul have felt driven to share their experiences and knowledge to help countless others.

How do I make Oil-Free Potato Chips?

Simply preheat your air fryer, slice your potatoes and toss them with some seasoning. They cook up beautifully and quickly in the air fryer while you chop up a hearty salad to go with them.

Shamiz uses an air fryer like this one, which is great for doing larger batches!

Cutting the potatoes in equal widths will allow them to cook most evenly. A mandoline slicer like this one is a really easy way to do that.

What if I don’t have an air fryer?

I’ve been experimenting with making these with the convection setting on my oven as well. I’ve found it a little quicker and easier to roast chunks, which still yields delicious results with less time cutting and turning the potatoes. But I’ve also had some super tasty potato chips.

  • 3-4 medium potatoes Yukon Gold or Agria varieties are especially good here

Instructions
  1. Preheat Air Fryer to 190 C/375 F. Slice potatoes in half and then into even, 5 mm slices.
  2. Toss potatoes with herb salt then place in air fryer tray. Air Fry for 10 minutes, then remove the potatoes and flip them over. Air Fry for an additional 7 minutes and enjoy!
Recipe Notes

To make in oven: Preheat oven to 425 F, using convection if you have it. Place potato slices on baking sheet lined with parchment or a silicone baking mat and sprinkle with herb salt or desired seasonings. Bake for 10 minutes, then remove and flip. Return to the oven until nicely browned, about 5-12 minutes. Depending on how evenly sized your potatoes are and how evenly your oven cooks, you may want to begin removing the potatoes that are done and give others a little more time.
