To make in oven: Preheat oven to 425 F, using convection if you have it. Place potato slices on baking sheet lined with parchment or a silicone baking mat and sprinkle with herb salt or desired seasonings. Bake for 10 minutes, then remove and flip. Return to the oven until nicely browned, about 5-12 minutes. Depending on how evenly sized your potatoes are and how evenly your oven cooks, you may want to begin removing the potatoes that are done and give others a little more time.
