Our FAVORITE Healthy Frosting!

Folks, there are a lot of plant-based frostings out there, but I don’t know of any that are as healthy AND delicious as this one.

When you are making plant-based baked goods, there are times when a good frosting can go a LONG way to take it from ho-hum to totally delicious, especially for those people in your life who aren’t used to plant-based treats.

But while a frosting based in coconut oil and maple syrup, can be a big improvement, it’s still really not all that great for your health.

The base of this frosting, however, is sweet potato, dates and some nut butter. All of which are high in fiber, which is super important. What’s so great about fiber? Faith Ralphs (source of this recipe) came on the podcast and explained how fiber is so important for carrying out excess hormones and supporting our overall health.

Faith shared her story of how going from being a pretty healthy vegetarian to eating primarily whole food, plant based allowed her to overcome her symptoms of PCOS, and finally conceive and deliver two beautiful & healthy children. This episode is PACKED with great info if you’ve ever wondered about the connection between food and hormones.

But back to the frosting, we have LOVED putting this on our favorite plant-based brownies and cupcakes (recipes coming soon). It’s easy to whip up while the baked goods are in the oven and it makes enough that I usually use the leftovers on a sandwich for my kids which they LOVE and I can feel good about.

  1. Before making brownies, cupcakes, etc., begin soaking dates (see notes) in hot water and bake sweet potato in microwave for 6-8 minutes or until tender.
  2. When cool enough to handle, peel sweet potato and drain dates RESERVING SOAK LIQUID
  3. Puree all ingredients in food processor, bullet or Twister jar until smooth, adding reserved soak liquid as needed to help it get moving.
  4. Taste and add maple syrup if desired for a sweeter finished product. I find that even a tsp can round out the flavor so it appeals to everyone.
  5. Store frosting in the fridge for up to a week. It will thicken as it chills and can be piped.
Recipe Notes

The water used to soak the dates is often very sweet, so soaking the dates in as little water as possible will keep that natural sweetness concentrated for use in the final product. I do this by packing my dates in a liquid measuring cup, then topping with just enough hot water to cover. Sometimes I will place another measuring cup or similar item to make sure dates stay submerged.
