Our Journey to Bethlehem Dinner
Last year we decided to try doing a Journey to Bethlehem dinner on Christmas Eve. We had our funeral potatoes and other traditional foods the Sunday before, which left Christmas Eve a lot more low-key as all we had to do was pull things out and do a little chopping.
We ate on a blanket on the floor in the glow of our Christmas lights and it was a fun way to remember the birth of Christ and save ourselves a lot of work.
We had the following:
Pita Bread
Olives (my kids devour black olives, so I had a combo of black and some green ones to give them some new experiences)
Stuffed Grape Leaves (I found these in the Deli at both Sprouts and my local Kroger)
Hummus – we went with a couple different varieties
Plain chickpeas
Pomegranates, pears
Bell Peppers, cucumbers, grape tomatoes, spinach (I’m not sure how many are totally authentic but they complemented the meal nicely!)
We definitely could have gotten by with less but it was fun to have so much variety. Other ideas I’ve seen include grapes and grape juice, figs or dates, nuts, and maybe goat cheese or fish.
It was also wonderful to have a lighter meal with lots of veggies in the midst of so many heavier holiday meals and treats showing up at the door!
