Plant-Based No-Bake Cookies
Today I bring you a recipe that saved the day when I was in need of a quick treat for an event AND a grocery trip. But the grocery trip was still a few days away and I just wanted to whip something up with what I had on hand.
Now that life has changed so quickly, I hope that a simple, quick and healthy treat is just the thing to brighten your day!
My friend, fellow WFPB blogger & Latter-day Saint Faith over at FaithfulPlateful.com came to the rescue when I found this recipe on her blog. These no-bake cookies came together in minutes with the few ingredients I still had in my pantry and were SO GOOD!
It just takes a few minutes to combine the short ingredient list into something magical: heat nut butter, cocoa powder, maple syrup, with a little plant-based milk.
When it’s smooth and combined, stir in your vanilla, then oats and shredded coconut and drop onto parchment to chill. We all loved the gooey yet just firm enough texture. Seriously, recipes like these make me wonder why I ever even turn the oven on!
This is definitely a recipe I’ll be showing my kids how to make next time they want to make a treat.
If you don’t have shredded coconut, you can sub with additional rolled oats, but the coconut does add a nice touch to the overall flavor and texture.

- 1/2 cup peanut or almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup milk of choice
- 2 tbsp cocoa powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1/4 cup unsweetened shredded coconut
- 1 cup quick oats
- 1/4 cup chopped peanuts optional

- To a small pot, add peanut butter, honey, milk, cocoa, and salt. On medium (NOT high) heat, stir until completely melted and smooth. Once melted, cook and stir about 1 minute longer, constantly stirring to avoid burning.
- Remove from heat and stir in vanilla. Then add coconut and oats, and optional peanuts. Stir until well-combined.
- Scoop out 1 tablespoon-fulls and drop onto wax paper. Let chill in refrigerator at least 30 minutes before serving. Store in refrigerator. Makes about 14 cookies.
