After years of dieting and knowing she needed to improve her health, Rachel Echols finally found her answer after a doctor recommended watching Forks Over Knives. She didn’t know a lot when she began but Rachel was all in on plant foods.

Over time she learned, fine-tuned and ultimately lost 85 pounds, dropped her cholesterol from 260 to 155 and her A1C from 5.4 to 4.8, all while being at peace with the fact that she was eager to change and her husband wasn’t interested.

But even more impressive than those changes are how Rachel says she feels happier, more capable, confident and eager to tackle things in her life.
