“Cheesy” Rice
Cooking once and eating twice is always a great way to go. Smoky Butternut Squash Soup also doubles as a savory sauce that makes a very comforting and satisfying cheesy rice and broccoli dinner. The combination of the soup, rice and broccoli provide plenty of protein and stick to your bones nutrition.The most important thing to remember is that the rice and broccoli dilute the flavor of the soup, so you will need to add additional seasonings. I like to mix in some additional Chipotle Tabasco and a generous sprinkling of sea salt.

- 4 cups Smoky Butternut Squash Soup
- 4 cups cooked brown rice
- 4 cups steamed broccoli cut into bite size pieces
- additional seasonings to taste salt, Chipotle Tabasco, Smoked Paprika, etc.

- Add additional seasonings to soup and mix with hot cooked rice and broccoli.

I have 5 kids ages 9,7,5,3, and 1. We all loved this comfort “Cheesy” dish!! I could not find the chipotle tabasco at my local store, so I used a chipotle powder spice I had in the cupboard. It was delicious, very flavorful! The smoked paprika added a great layer of flavor we loved too! So glad I have found your site!!
